Salted double choc cookies

The perfect chocolate chip cookie should be soft, chewy, and crispy, all at the same time. These healthy salted double choc chip cookies definitely meet the standards. Made with wholemeal flour and minimal sugar, they are so ridiculously delicious… and not just for a healthy cookie either!

Makes 8

Ingredients

1 + 1 / 2 cup wholemeal flour

1 / 2 tsp baking powder

1 / 4 cup cacao powder

1 / 2 tsp ground cinnamon

Sprinkle of sea salt

1 / 4 cup olive oil

1 / 4 cup maple syrup

1 free-range egg

1 tbsp nut butter of choice i.e. almond/peanut/cashew

1 / 3 cup chocolate chips

Method

Preheat oven to 160C. In a medium mixing bowl, stir in the flour, baking powder, cacao, cinnamon and sea salt until combined.

In a small mixing bowl, whisk the oil, maple, egg and nut butter.

Fold the wet ingredients into the dry, until just combined. Stir in the choc chips.

On a baking tray, lined with baking paper, scoop the batter into tbsp-sized balls. Flatten slightly.

Bake for 12 minutes, or until cooked. The cookies will continue to harden when cooling down.

Keeps in an air-tight container for 3 days.
